This cream is ready to fill all your baked goods immediately after baking. It contains 18.5% freshly roasted hazelnuts, peeled just minutes before roasting to release their pure, natural flavor. Combined with Callebaut® cocoa, it results in a fruitier and richer roasted hazelnut taste.

Apply the filling to any pastry, tart, éclair, or croissant right after preparation, or mix it into your own fillings to enhance their aroma.

The cream can be used directly as a pastry filling at room temperature - straight from the container.

  1. Simply fill a piping bag with the cream and add unique flavor to your desserts.
  2. The creams can also be mixed with different ingredients: from waffle flakes to crushed cookies or chocolate shavings. The unique composition of the cream keeps them perfectly crunchy.
  3. The creams can also be used to flavor your homemade pastry creams. Their use contributes to a rich, creamy texture with a famous chocolate taste.

Recipe Highlight: Hazelnut Tartlet

To make 4-5 tartlets Ø 15 cm:

Hazelnut Sablee Ingredients:

  • 195g butter
  • 195g icing sugar
  • 1/2 vanilla pod
  • 84g egg white
  • 1g salt
  • 150g hazelnut powder
  • 375g flour

Preparation: Roll out the dough to a thickness of 4 mm and place in tartlet molds of approximately 15 cm diameter. Bake at 165ºC. Let cool.

Finishing and Presentation: Fill with Doppia Nocciola cream. Finish with freshly roasted and caramelized whole hazelnuts and gold leaves.

Instructions for use:
Store the product in a clean, dry, odorless environment (15-20 °C).

Always use a clean and dry spoon/spatula. We do not recommend overheating the product.

Do not store in the refrigerator or freezer. In case of partial separation of the oils during storage, mix the product well to obtain the original structure. Lower temperatures can cause the fat to crystallize, which can lead to possible clogging of the product.

With gentle heating and mixing, you will return the product to its perfect condition.
